Cheese Platter with Roasted Fruit Salad and Brandy Syrup

1 Brie or Camembert

1 Blue cheese of choice

1 Cheddar of choice

(I often just serve 3 different soft cheeses)

Fruit salad

2 tbsp grapeseed oil

2 Golden Delicious apples, sliced into wedges

4 fresh plums, sliced into wedges

200g soft dried figs

Heat oil in pan and roast fruit for a few minutes, until apples just start to brown

Let cool

Syrup

2 cups apple juice

3/4 cups brandy

juice of 1/4 lemon

2 cinnamon sticks

pinch of sea salt

Combine apple juice, brandy, lemon syrup and cinnamon sticks in saucepan

Let boil until liquid has halved

Season lightly with salt and let cool

To Serve

Arrange cheese on one side of large serving platter

Spoon fruit onto rest of plate

Drizzle syrup over cheese and fruit

LEMOEN-EN-NEUTSLAAI

Bestanddele:

3 koppe coz-slaai

2 groot lemoene, geskil en in sirkels gesny

120g bokmelkkaas in skil, gebreek of gesny

1 kp pekanneute, liggies gerooster

Sap van 1 lemoen

1 eetlpl witwynasyn

1/4 kp olyfolie

Seesout

grofgemaalde swartpeper

2 grasuie, gekap

Metode:

Breek coz en rangskik op groot opdienbord

Rangskik lemoenskywe en kaas bo-oor

Strooi neute oor

Klits sap, asyn en olie saam

Geur liggies met sout en peper

Drup oor slaai

Sprinkel grasuie oor

ONE-PAN-BURGER

Per portion:

2 tbsp grapeseed oil

1 large brown mushroom

2 medium slices onion

1 small ciabatta

2 tsp fruit chutney, barbeque sauce or marmelade

4 black olives, pitted

(replace olives with a slice of tomato if prefered)

a few baby spinach leaves

1 thick slice Edam or Gouda

1 egg

Sea salt

Freshly ground black pepper

Finely chopped parsley

Directions:

Heat oil in pan, place mushroom in pan and fry over high heat for 2 minutes, turn regularly

Lower heat and place onion next to it

Slice ciabbata horizontally in two and place in pan until golden brown on both sides

Remove from pan and place bottom half on serving plate

Place olives in pan and press down

Spread bottom part of ciabatta with chutney

Place olives on top

Place spinach in pan, let wilt

Place spinach on top of olives

Spoon onions on top of spinach

Break egg in pan

Place mushroom on top of spinach

Place slice of cheese in pan, turn around, but do not let cheese melt

Place cheese on top of mushroom

Place egg on top

Season lightly with salt and pepper

Sprinkle with parsley

Cover with top half of ciabatta

Enjoy immediately!

PAMPOEN-PEKANBROODJIES

Ingredients:

1 kp ligbruin suiker

6 eetlpl botter

1 tlpl fyn kaneel

1 tlpl fyn gemmer

2 tlpl vanielje-ekstrak

2 groot eiers

2 groot eierwitte

1 kp pampoenpurée

2 kp bruismeel

1 opgehoopte tlpl bakpoeier

1/2 kp melk

1 kp gedroogde cranberries

1 kp pekanneute, gekap

Metode:

Sny bakpapier in vierkante en plaas binne 12 muffinpannetjies

Meng suiker, botter, speserye en vanielje saam

Klits eiers en eierwitte by

Vou pampoenpurée by

Meng bakpoeier by meel

Meng meel en melk beurtelings by pampoenmengsel

Vou cranberries en neute by

Bak ongeveer 25 minute in oond teen 170˚C (waaier)

Laat afkoel vir ’n paar minute in pannetjies en daarna op draadrak

STEAK & CHEESE PARCELS

(10 parcels)

Ingredients:

10 tortillas wraps

40g green pesto

800g rump steak, grilled medium to rare

120g Cheddar

120g Gruyere

4 medium zucchini, ribboned with vegetable peeler

Sea salt

Freshly ground black pepper

Fresh parsley, finely chopped

Grape-seed oil

Directions:

Spread 7cm x 7cm surface in center of each tortilla with pesto

Cut steak into thin strips

Place 3 or 4 strips of steak in center of each tortilla

Place small handful of cheese on top

Place some zucchini on top

Season with salt

Season generously with pepper
